Summary:Red roselle (Hibiscus sabdariffa L.) is one of the plants that have high antioxidant content in the petals. Most influence antioxidant content is anthocyanin. Anthocyanin is the natural pigment that gives the red color pigment classified as flavonoids and are generally soluble in water so widely used for teas and potential as a natural dye. The purpose of this study are: (1) to determine the stability of the dye due to the influence of the type of solvent extracts rosella flower petals, (2) to determine the effect of heating with variations in temperature and pH stability of the color of the solvent to extract rosella flower petals. This research was conducted by extracting samples with aquadest and 95% ethanol with a ratio of (1:15); (1:25); (1:35) and (1:45) w/v with T = 30oC, 40oC, 50oC and 60oC (aquadest only) and pH 2,3,4 and 5. The extract obtained is used to test the stability of the color after the process of maceration during 24 hours using visible spectrophotometer. Results from this study showed that 95% ethanol with the ratio of 1:15 (w/v) is the best solvent to extract the rosella flower petals by absorbance at 3,352 at pH 2. While the distilled water extraction conditions is best done on a heating temperature of 30 ° C with pH 2 and ratio of 1:15 (w / v).
